Anasazi beans are small, kidney-shaped, purple and white beans. They are a type of heirloom shelling beans and are part of the common bean family, Phaseolus vulgaris. This is the same family that includes green beans, wax beans, and most other shelling beans.

These beans have been cultivated for over 7,000 years, making them one of the first crops to be cultivated in North America. They were initially farmed by the Puebloans, an indigenous civilization that ruled the American Southwest.

Anasazi beans are known for their sweet and mild flavor and are commonly used in Latin American and Southwestern cuisines. They are often used in refried bean recipes and other baked bean recipes.

Nutritionally, Anasazi beans are packed with protein, starches, fiber, as well as potassium and calcium. A half cup of raw Anasazi beans contains about 280 calories, 52 grams of carbohydrates, 14 grams of protein, 2 grams of fat, 12 grams of fiber, 500 milligrams of calcium (50 percent DV), 5.4 milligrams of iron (30 percent DV), and 680 milligrams of potassium (19.4 percent DV).

Ingredients:

  • 1 lb. beans
  • 1 onion
  • Garlic salt, to taste
  • Pepper, to taste
  • Assorted spices

Cooking Directions:

  1. Rinse beans thoroughly.
  2. Combine rinsed beans with spices in 8-10 cups of water.

Crock Pot Method:

  1. Cook on low heat for approximately 8 hours. (Preferred method for enhanced flavors)

Stove Top Method:

  1. Simmer on the stove top for approximately 4-6 hours.
  2. Cover the pot and keep an eye on the water level.
